Easy Gluten-Free Millet Banana Pancakes

I made these terrific millet-banana pancakes the other day on a whim. Now, I’m not exactly a fan of banana pancakes; but, I’m trying to eat healthier these days to balance out my steady diet of bacon-feasting and what not. These are super easy to make, and it’s perfect for anyone who just wants to make a few pancakes for themselves in a hurry.  The recipe and ingredients require very little thought–a good thing if you’re making pancakes from scratch at 7 a.m.!  Just throw them together and mash and mix away.  The batter should be sort of thick and not watery.  Fry your pancakes on medium to low heat on a greased pan, and that’s it. The batter makes two eight-inch pancakes. So good!

They come out sort of on the eggier side, rather than bready, but they are fluffy and not flat. They are sweet and don’t need syrup, but having fruit on the side like blueberries or strawberries would give it that sweet-tart flavor party in your mouth that could liven up those morning senses.
